Slumber Party Pie, too!

So for Christmas this year, part of our family had a "secret Santa" drawing.

Uncle David drew my name, and, in addition to a new jump drive and a Labrador ornament, he gave me the movie "Waitress." Now, if you have seen this movie, you know that it is a great commentary on having the courage to start over and make yourself happy.

The most entertaining part of the movie, however, is the fact that the waitress, Jenna, played by Keri Russell, bakes the most amazing pies that reflect her "Bad Baby Pie" and "Lonely Chicago Pie."

My friend Lizzie and I just watched the movie (for the second time), and have decided to commemorate the occasion by creating for your entertainment this evening (or morning, or afternoon, whenever you have time to read this) "Slumber Party Pie."

Here we are, ready to bake.
First, we had to decide how to make the crust. Being the fiends for sugar bomb cereals that we both are, we opted to make a crust of Cap'n Crunch Berries.
1. Fill the bottom of a pie dish with Crunch Berries (Approximately 4 cups).2. Melt 4 tablespoons of butter.
- Mash up the Crunch Berries in either a food processor or with a mortar and pestle.- Add butter to the crushed cereal, mix well.- Press the mixture into the bottom of the pie pan.- Bake at 350 for 10 to 12 minutes.

Next, we made the filling. The filling is two part.
Part One: Cream Cheese Goodness
8 oz cream cheese
1/2 cup half and half
1/4 cup sugar
1 tsp almond extract
1/4 tsp cinnamon

Essentially, we were hoping to make whipped cream, but half and half does not have enough fat in it to properly stand up. So...
1. Begin whipping the half and half with the sugar using a stand mixer (or hand mixer). You can try and try, but trust us, it won't turn in to whipped cream.
2. Next, add the cream cheese and turn up the mixer to medium high speed. It should start to get thick.
3. Add the extract and cinnamon. Mix it up!
4. Spread that over the crust.

Part Two:
Semi-Healthy Berry Filling
A Variety of Frozen Berries

We pretty much just raided Lizzie's freezer and started blending everything up.
1. Blend berries 2. We added a little sugar, and just a scoop of the cream cheese filling to give it a little more volume. We spread that on top of the cream cheese filling already in the pie pan.
Finally, we topped the whole thing with more berries (aka sugar bombs) arranged in a decorative pattern.
Voila! We put the pie in the fridge and we will eat either really soon...or sometime tomorrow.
Warning: we made this up. and it was way after midnight. and we only used our cookbook as a coaster. You are not obligated to make this recipe.
Unless, of course, you're at a slumber party. Then you have to.
